Country Crocked Ham
  • 3-6 pound ham
  • 1/4 cup apricot-pineapple preserves
  • 2 TBLS prepared mustard
  • 1/2 cup brown sugar
  1. Place ham in crock.  
  2. Mix remaining ingredients and pour over ham.
  3. Cook on low for 6 hours.
  4. Slice and pour sauce over ham slices and enjoy!

October Turkey Dinner Ala Crock
  • 6 pounds turkey (either breast, hindquarters or a mix of both)
  • 1 whole onion, peeled & cut in quarters
  • 4 cloves garlic, peeled
  • 1/2 cup water
  • Salt & Pepper to taste
  1. Wash turkey pieces, pat dry and put in crock pot.  Salt & pepper.  
  2. Add onion, garlic and water.
  3. Cook for 8-9 hours on low.
  4. Make mashed potatoes, gravy, stuffing, cranberry sauce, corn, carrots, rolls and a big pumpkin pie. 
"Viola-Thanksgiving in October or a Thanksgiving dry run."

Kerry's Kickin' Kapaa Kauai Chicken
  • 4 boneless, skinless chicken breasts or 6 thighs
  • 1 can cream mushroom soup
  • 1/2 cup sour cream
  • 10 oz can pineapple chunks, drained
  • 1 red bell pepper, cut into strips
  • 1 small onion, sliced
  • salt & pepper to taste
  1. Spray slow cooker with non-stick cooking spray.  Place chicken in slow cooker. 
  2. In bowl, mix soup and sour cream and pour over chicken.
  3. Place pineapple, red pepper, onion and salt and pepper over chicken.
  4. Cover and cook on low 7-8 hours or high 3-4.
  5. Very yummy served over cooked rice.

Fall Beef & Beer Casserole
  • 2 TBLS Oil
  • 1 1/2 pounds beef cut into 1" cubes
  • 2 TBLS flour
  • 1 cup beef broth
  • 2 cups brown beer or ale
  • 1 cup water
  • 1 onion sliced
  • 2 carrots sliced
  • 1 leek sliced
  • 2 stalks celery sliced
  • 1 cup mushrooms sliced
  • 1 turnip cubed
  • 1 tsp mixed herbs
  1. Heat oil in large skillet over medium to high heat until hot.  Cook beef until brown on all sides.  Lower heat and add flour to skillet.  Cook and stir 2 minutes.  Gradually add broth, ale and water.  Bring to bowl. 
  2. Transfer to crock.  Add remaining ingredients.  Cover and cook on low 8-10 hours or on high 4-6.
